Carrot Kheer

Happy, Healthy and Prosperous New year wishes from Mom's Kitchen Taste :-)

To kick start mom's kitchen taste cooking post and new year, I would like to start off with a Sweet (Carrot Kheer);

Carrot Kheer is an easy to prepare and popular Indian milk shake/dessert/pudding which is healthy, nutritious, rich in vitamin A/antioxidants and tasting great (yummy). Carrot Kheer is commonly prepared on special occasions/parties. It exists from the nineteenth century.
Do print the recipe and share it with your loved ones!

Ingredients:
            1)      250 Gms Fresh Carrots
            2)     2 Glass Fresh Milk
            3)     150 Gms Sugar
            4)     1/2 Tsp Cardamom Powder
            5)     5 Cashews
            6)     5 Sliced Almonds

How to make Carrot Kheer:
  • Wash the carrots and Peel off the carrot's skin;
  • Cut the carrots into small slices and boil it in a pressure cooker;
  • Grind the boiled carrot with milk and sugar in a mixer and make paste of it;
  • Boil the above mixture in a big vessel and leave it on normal heat;
  • Add cardamom powder and stir well;
  • Heat the mixture until the raw smell completely leaves;
  • Garnish with cashews and sliced almonds before serving;
  • Tasty carrot kheer is ready. Serve it hot or cold as per your/guest's choice!
Mom's Tip:
1) Do not refrigerate the kheer while it is hot; let it to cool down for some time and then refrigerate it.
2) This measurement can be served for 4 persons. If serving is needed for more persons, then you can mix the fried rava while grinding carrot paste.
3) If needed garnish with some saffrons.
